I created this recipe because I love my sweets! Sometimes I just crave cake. 😋
This zucchini bread tastes like banana bread (the way zucchini bread always does). So, you'd never guess it's low-carb!!
Since it's made with hazelnut flour, the addition of semi-sweet chocolate chips makes it taste like Nutella.
Various substitutions are listed at the end of this recipe, depending on your taste and goals.
1 and 1/2 cups hazelnut flour
½ cup Birch Bender Paleo pancake mix (or protein powder)
1/4 cup Stevia or Xylitol
1 tsp cinnamon
½ tsp baking powder
½ tsp baking soda
1 egg yolk, beaten
4 egg whites, beaten into peaks
1.5 cups coarsely grated zucchini
1/2 cup of Stevia sweetened or semi-sweet or milk chocolate chips (such as @lilys_sweets). Use vegan protein powder (such as Vega) for dairy free/Parve option.
Preheat oven to 350 degrees. Combine all dry ingredients. In separate bowl, beat egg whites into peaks, fold in optional almond butter, egg yolk and grated carrots or zucchini. Fold in to dry ingredients. Bake until a knife comes out clean.

What if you are allergic to stevia, monk fruit, as well as any artificial sweetener?
Can I just leave that out or use something else? (I don’t want to use sugar).
Thanks for your input, would love to try this bread.
